Elrick Log

Elrick Log, crafted from the raw milk of Errington Cheeses (Lanarkshire) small dairy goat herd, features ash and is lactic. Made with vegetarian rennet, this log undergoes yeast ripening, gradually softening from the exterior inward when matured sufficiently.

Elrick, named after the village Elsrickle nearby, unfolds with citric and fresh flavors emanating from the middle. As it ripens, the rind takes on a subtle spiciness.

This cheese is sold by the half or the whole.
